Ingredients
  

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup tahini
  • 3 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 1/4 cup fresh parsley, chopped
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, sliced
  • 8 ounces pita bread wedges
  • 1 teaspoon smoked paprika

Method
 

  1. Drain your chickpeas really well and add them to your food processor along with the tahini, lemon juice, and minced garlic. Pulse everything together until it starts breaking down, about 30 seconds. You want it a little chunky at this point because we're gonna blend it more in the next step.
  2. Add the cumin and salt, then blend for 2-3 minutes until the mixture is smooth and creamy. Stop and scrape down the sides of the food processor as needed. This homemade hummus entertaining platter base should be totally lump-free by now.
  3. While the food processor is running, slowly drizzle in 2 tablespoons of olive oil through the feed tube. This creates that silky texture that makes store-bought look sad in comparison. Keep blending for another 30 seconds after the oil goes in.
  4. Taste it and adjust everything — add more salt if it needs it, more lemon if you want it tangier, or a splash of water if it's too thick. I usually thin mine out a little bit because I like a slightly looser consistency on the platter.
  5. Transfer your hummus to a shallow serving bowl or dish (I use a wide shallow bowl so it shows off nicely). Smooth the top with the back of a spoon to create a little well in the center if you're feeling fancy, though honestly this step is totally optional.
  6. Drizzle that smoked paprika over the top and sprinkle the fresh parsley all over. Arrange your cucumber slices, cherry tomatoes, and Kalamata olives around the hummus, leaving some space on the platter edges.
  7. Tuck your pita bread wedges around everything to complete your easy pita dip setup. You can serve this immediately or cover it with plastic wrap and refrigerate for up to 4 hours before your guests arrive.
