Ingredients
  

  • 2 cups plain Greek yogurt
  • 1 cup sliced strawberries
  • 1 cup fresh blueberries
  • 1/2 cup granola
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1 tbsp chopped pistachios
  • 1 tbsp butter
  • 1 tbsp chopped mint leaves
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice

Method
 

  1. In a medium bowl, combine 2 cups plain Greek yogurt with 1 tsp vanilla extract and 1/4 tsp cinnamon. Stir really well until the vanilla gets evenly distributed throughout. Taste it now—this is your base, so you want it perfect. The mixture should smell amazing and taste creamy with a hint of warmth from the spice.
  2. In a small bowl, toss 1 cup sliced strawberries with 1 tbsp lemon juice and 2 tbsp granulated sugar. Let them sit for about 2 minutes so they release their juices a little. This step is what makes your red layer pop with actual flavor instead of tasting like plain berries.
  3. Heat 1 tbsp butter in a small skillet over medium heat until it's melted and smells nutty. Add 1/2 cup granola and toast it for about 2 minutes, stirring constantly. You'll hear it sizzle slightly and it'll smell incredibly toasted—don't walk away or it'll burn (I learned this the hard way).
  4. Pour the toasted granola onto a plate to cool for a minute. Stir in 1 tbsp chopped pistachios while it's still warm so they get a little toasty too. This gets you that patriotic crunch that makes the red white blue yogurt parfaits actually interesting to eat.
