Method
 

  1. Combine graham cracker crumbs, melted butter, sugar, salt, and vanilla bean powder in a bowl and mix until the texture resembles wet sand. Press this mixture firmly into the bottom of an 8x8 baking pan, creating an even layer. Use the bottom of a measuring cup to pack it down tight so it holds together when you slice it.
  2. Spread the vanilla ice cream as your first layer over the crust, smoothing it with a spatula so it's about 1/2 inch thick. Pop the pan in the freezer for 20 minutes so this layer gets firm before you add the next one. Don't skip this step—it keeps your layers from getting all mushy and mixed together.
  3. Take the pan out and layer your strawberry ice cream on top of the vanilla, spreading it evenly and smoothing it to about 1/2 inch thick. Return to the freezer for another 15-20 minutes until this layer firms up. You'll know it's ready when you poke it and it doesn't sink back in immediately.
  4. Add the final blueberry ice cream layer, spreading it smooth and even just like the previous layers. This is where the patriotic vibes really come through—don't skip the even spreading or they'll look wonky when you slice them. Pop it back in the freezer for 20 minutes.
  5. Once all layers are frozen solid, let the pan sit at room temperature for 3-5 minutes so the ice cream sandwiches 4th july are easier to cut without cracking.
