  • 1 cup chicken broth
  • 2 tbsp tomato paste
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • 1/4 cup fresh Italian parsley, chopped
  • 1/2 cup grated Parmesan cheese

  1. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat until shimmering, approximately two minutes. Add turkey sausage in crumbled pieces, breaking it apart with a wooden spoon as it cooks for six to eight minutes until deeply browned. Do not stir constantly—allow sausage to develop fond on the pot bottom, then scrape it loose. This fond is liquid gold for your sauce.
  2. Once sausage is browned, add diced onion and cook for three minutes until softened and translucent. Stir in minced garlic and cook for exactly one minute—garlic burns quickly and turns bitter if left unattended. You should smell sweet, pungent aroma; if it smells burnt, discard and start fresh with new garlic.
