Pour 2 cups whole milk, 1 cup heavy cream, and 3/4 cup sugar into a large mixing bowl. Whisk together until the sugar fully dissolves, about 2 minutes of solid whisking. This step matters because undissolved sugar creates gritty popsicles, and nobody wants that.
Add 1 cup fresh orange juice, 2 tablespoons orange zest, 1 teaspoon vanilla extract, 1/2 teaspoon lemon juice, and 1/4 teaspoon salt to the cream mixture. Stir everything together until completely combined, roughly 1 minute. The mixture should smell absolutely amazing at this point—that's how you know you're on track.
Fold in 1/2 cup whipped cream gently using a spatula, making sure not to overmix and lose all the airiness. Then whisk in 1/4 cup light corn syrup and 2 large eggs until smooth and uniform. I personally do this step by hand because it takes literally 90 seconds.
Strain the entire mixture through a fine-mesh sieve into a separate bowl to remove any foam or lumps. This catches those weird stringy bits from the zest and ensures your creamy dreamsicle popsicles turn out completely smooth. Trust me on this—it's worth the extra 2 minutes.
Divide the strained mixture evenly among your popsicle molds, filling each about 3/4 full. Drop 2–3 small pieces of diced mango into each mold so they're scattered throughout, not clumped at the bottom. Insert the sticks according to your mold's instructions, usually when the mixture's partially frozen.
Place the filled molds in your freezer and let them sit for at least 6 hours, though overnight is honestly better. If your molds don't have stick guides, wait until the mixture's about 4 hours frozen before inserting sticks so they stand upright. Mine always takes closer to 7 hours to freeze solid, so don't panic if it takes a little longer.
Once completely frozen, run warm water over the outside of each mold for about 10 seconds to loosen the popsicles.
