  • 2 tsp gelatin powder
  • 1 vanilla bean
  • 1/4 tsp salt
  • 1 tbsp honey
  • 1/2 cup water
  • 1 tsp vanilla extract
  • 1/2 tsp lemon zest
  • 1 tbsp powdered sugar
  • 1 fresh mint leaf

Method
 

  1. Pour the 1/2 cup water into a small bowl and sprinkle the 2 tsp gelatin powder over it evenly. Let it sit for about 2 minutes so it blooms and absorbs the water—don't skip this step because it helps your classic summer panna cotta set properly. You'll see it get slightly thickened and puffy when it's ready to use.
  2. Heat your 2 cups heavy cream and 1 cup whole milk in a saucepan over medium heat until it's steaming hot (around 160°F), but don't let it boil. Split your vanilla bean lengthwise and scrape the seeds into the cream mixture. Add the pod too—it releases tons of flavor. Stir in your 1/3 cup sugar and 1/4 tsp salt until everything dissolves.
  3. Once the cream mixture is hot and steaming, remove it from heat immediately. Pour the bloomed gelatin into the hot cream and stir constantly for about 1 minute until it's completely dissolved. This is the magic moment—the heat dissolves the gelatin and makes your panna cotta smooth and creamy.
  4. Let the cream mixture cool for about 5 minutes at room temperature, then stir in your 1 tsp vanilla extract and 1/2 tsp lemon zest. The lemon adds brightness without being obviously lemon-y—trust me on this. Strain the mixture through a fine mesh sieve into a pitcher to catch any lumps or vanilla pod pieces.
  5. Pour the strained mixture evenly into 6 serving glasses or small ramekins, filling each about 3/4 full. I personally use wine glasses because they look fancy but honestly any glass works. Cover loosely with plastic wrap and refrigerate for at least 4 hours (overnight is even better for classic summer panna cotta that's perfectly set).
  6. Before serving, let your panna cotta sit at room temperature for exactly 2 minutes—this makes it creamy instead of rock-hard. Top each serving with a tiny pinch of your 1 tbsp powdered sugar and 1 fresh mint leaf for color.
  7. Serve immediately and watch everyone ask how you made something that looks this elegant. The whole thing comes together way faster than people expect, which is honestly my favorite part about making panna cotta for entertaining.
