Add chopped cabbage, stirring to combine with beef mixture.
Pour in diced tomatoes and beef broth, then stir well.
Cover skillet and reduce heat to medium, cooking 8-10 minutes.
Stir cabbage halfway through until wilted and tender-crisp.
Remove lid and cook uncovered for 2 minutes to reduce liquid.
Sprinkle shredded cheese over the entire surface evenly.
Cover for 2 minutes until cheese melts completely.
Remove from heat and immediately top with Fritos corn chips.
Garnish with sour cream, green onions, and cilantro before serving.
