  • 1/8 tsp fine sea salt
  • 1 packet gelatin
  • 1/4 cup cold water
  • 1 tsp alcohol-free orange blossom water
  • 1 tbsp powdered sugar
  • 10 fresh mint leaves

Method
 

  1. Pour the cold water into a small bowl and sprinkle the gelatin over it. Let it sit for about 5 minutes to bloom — this is crucial, so don't skip it. You'll see it get all spongy and kind of absorb the water. This step makes everything dissolve smoothly without lumps later.
  2. Heat your cream and sugar in a saucepan over medium heat, stirring occasionally. You want it hot but not boiling — just until steam rises from the surface and sugar dissolves completely. This takes about 5-7 minutes, and you'll hear it get all bubbly at the edges. Don't walk away during this part because it can scorch if you're not watching.
  3. Remove from heat and add the bloomed gelatin to the warm cream mixture. Stir constantly for about 2 minutes until the gelatin dissolves completely. You shouldn't see any grainy texture — it should look totally smooth. Trust me on this, lumpy gelatin ruins the whole texture.
  4. Stir in the fresh lemon juice, lemon zest, salt, and orange blossom water. Mix really well so everything combines evenly. The mixture might look a little watery at first, which is totally normal. It thickens up as it cools, I promise.
  5. Strain the mixture through a fine mesh sieve into a bowl to catch any gelatin bits or zest chunks you don't want in the final dessert. This step isn't required but honestly makes it silkier. Pour the strained mixture into serving glasses or small bowls.
