Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/2 cup milk
  • 2 large eggs
  • 1/4 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup tomato paste
  • 2 tbsp olive oil
  • 1/4 cup BBQ sauce

Method

  1. Grab a small bowl and combine the breadcrumbs with milk, letting them sit for about 3 minutes until the breadcrumbs soften up completely. This step is what keeps your meatloaf recipe so incredibly moist inside. While that's happening, preheat your oven to 375°F and line a baking sheet with foil for easy cleanup later.
  2. Crack your 2 eggs into a large mixing bowl and beat them lightly with a fork. Add the ground beef, the soaked breadcrumb mixture, garlic powder, onion powder, salt, and pepper all at once. Mix everything together gently with your hands for about 1-2 minutes—don't overmix or you'll end up with a tough, dense meatloaf.
  3. Shape the meat mixture into a loaf that's roughly 9 inches long and 5 inches wide on your prepared baking sheet. It doesn't have to be perfect—mine's never symmetrical but it cooks beautifully anyway. Make sure it's roughly the same thickness throughout so it cooks evenly.
  4. In a small bowl, whisk together the ketchup, brown sugar, mustard, and tomato paste until smooth. Set aside about 3 tablespoons of this mixture for the top glaze. Brush the remaining mixture all over your shaped meatloaf and bake for 40 minutes uncovered at 375°F.
  5. After 40 minutes, pull the meatloaf out carefully and brush it with the reserved ketchup mixture. Pour the BBQ sauce over the top, spreading it evenly to cover the whole surface. This is when it really starts smelling incredible—I promise your kitchen will smell like a steakhouse.
  6. Return it to the oven for another 15 minutes until the glaze gets bubbly and slightly caramelized around the edges. The internal temperature should hit 160°F when you stick a meat thermometer in the center. Don't skip checking the temp—it's the only way to know for sure it's done but not overdone.
  7. Let your meatloaf recipe rest for 5 minutes on the baking sheet before slicing and serving. This resting time lets the juices redistribute throughout the meat so every bite stays tender. Slice it into 6 pieces and serve immediately with your favorite sides for a classic American dinner.
