Ingredients

  • 2 cups watermelon, cubed
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, torn
  • 1/2 cup cucumber, thinly sliced
  • 2 tablespoons fresh lime juice
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon honey
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 12 bamboo skewers
  • 1 teaspoon toasted sesame seeds
  • 1 tablespoon chopped fresh cilantro

Method

  1. Soak 12 bamboo skewers in a bowl of water for at least 30 minutes. This prevents them from charring or splintering when you handle them. You can do this step while you're prepping everything else, so it's not an extra hassle. Keep them submerged the whole time.
  2. Cut 2 cups of watermelon into roughly 1-inch cubes. You want them bite-sized but sturdy enough to stay on the skewer without falling apart. I personally cut them a tiny bit bigger because I love the juiciness factor. Aim for roughly 12 cubes total for even assembly.
  3. Prep your other ingredients: crumble 1 cup of feta cheese, tear 1/4 cup of fresh mint leaves, slice 1/2 cup of cucumber into thin half-moons, and measure out 1 tablespoon of cilantro. Having everything ready before you start assembling makes the whole process super smooth. It's way easier than scrambling to find things while holding a skewer.
  4. Thread the watermelon feta mint skewers by alternating pieces: start with watermelon, then feta, then a cucumber slice, then mint, then repeat. This creates the prettiest pattern and ensures every bite has all the flavors. I usually do watermelon, feta, cucumber, mint, watermelon, feta—three pieces of watermelon per skewer works perfectly. Don't pack them too tight or the watermelon will crack.
  5. Whisk together 2 tablespoons of olive oil, 2 tablespoons of lime juice, 1 teaspoon of honey, 1/2 teaspoon of sea salt, and 1/4 teaspoon of black pepper in a small bowl. This dressing is the secret to elevating these skewers from cute to wow-level impressive. Drizzle it lightly over the assembled skewers just before serving. You want enough to flavor them without making them soggy.
  6. Arrange the skewers on a serving platter and scatter the toasted sesame seeds and cilantro over top as a garnish. This is where the presentation really shines—they look absolutely gorgeous arranged on a white or neutral platter. I usually add a tiny lime wedge on the side for decoration and because guests love squeezing a little extra juice if they want.
  7. Chill the skewers in the refrigerator until you're ready to serve. You can make these up to 4 hours ahead, which is perfect for stress-free entertaining. The flavors actually meld together beautifully the longer they sit, so don't hesitate to prep them earlier in the day.
